Using jQuery UI in connection with other libraries I've worked on SPAs, touch-optimized web pages, and also "traditional" web pages. Nowadays, Angular or React might be a better choice when implementing SPAs, but when you have just a little job to do, a lightweight library might be better than a heavy framework.
